[vtkusers] Contents of VTK example data?

What exactly do the example data files office.vtk and kitchen.vtk
contain?
The vector "velocity" is easy enough, but there is a long series of
scalars with rather informative names like "p1", "u1", "v1", etc.  Does
anyone know what these are?
