[Paraview] PV data server without X

Hi Greg,
I don't think you can build the data server without X11. We haven't
separated the data server from the rendering libraries that well.
However, if you build against a stubbed X11, it should work. If the
data server tries to make an X connection for some reason, it is a bug
that we should fix.
