[vtkusers] Carbon or Cocoa

Hi Jens,

Cocoa and Carbon (and X11) are very different graphical environments 
that each require their own set of VTK libraries.  You'll have to 
create 2 separate builds of VTK and use the appropriate build for the 
project you're working on.
