[vtk-developers] Add missing override warnings to gitlab builds...?

Hi Sean,

I've added -Winconsistent-missing-override to the build flags for bigmac's
VTK builds.  Clang didn't recognize
-Winconsistent-missing-destructor-override but suggested I might mean this
one.  Hopefully that will help with this.
