[Paraview] plotting additional variables in paraview

This is probably a simple question, but I haven't been able to find
the answer yet...

I've read in a file with geometry and results, checked the box for
all variables, and then see all the variables in Object Inspector/
Properties (e.g., all the components of stress).  However, in the
variable chooser toolbar, I only see a subset of the variables (e.g.
von Mises stress).

How can I map all the other variables from the Object Inspector?
