Use the cmake command-line option -DCMAKE_INSTALL_PREFIX to install your
stable library wherever you want and your development library wherever you
want.

If you have a supplementary CMake project that wants to use either the
stable or development version of a library, use the environment variables
CMAKE_INCLUDE_PATH and CMAKE_LIBRARY_PATH.

For more information consult
http://www.cmake.org/Wiki/CMake_Useful_Variables or the full documentation
at http://www.cmake.org/HTML/Documentation.html.
