[Paraview] Select which fields to load when loading .vtm multi-block

Multiblock data sets aren't required to have the same fields defined over
all of the blocks. That doesn't necessarily mean this can't be done, it
just means it may not be quite as straightforward and/or clear as for the
data set readers.
