Because perceptual studies show that human vision is quite bad at properly interpreting the rainbow colors as linear range of numbers.  There has been a push in the visualization community to discourage people from using it.

Here is a link to a paper that outlines in more detail the reasons for abandoning the rainbow color map and the design considerations in creating the new one.

Right you are :-/ .... I told it to make that the default, will that hold across sessions ? Why is full red-to-blue not the default any more ? TIA :-) ....
