[Paraview] Configuring with VTK_USE_CARBON=OFF not working as expected

And just to follow up with more info, even if I do use the CMake gui  
(ncurses) to set VTK_USE_CARBON=OFF and VTK_USE_COCOA=ON I get the  
following compile error:
