[Paraview] [PV31] colormap...

Of course.  Go to the Display tab (in the Object Inspector) and click on
the Edit Color Map button.  That will bring up a dialog box that allows
you to change the color map to anything you want.  In that dialog there
is also a button that allows you to choose from a set of predefined
color maps (which you can add to).
