Dear Christian,
ITK has classes that enable writing files. Many or most examples in the
Software Guide end with a fileWriter object that actually writes to disk
the output image(s) of the process.
Chapter 7 in the ITK Software Guide tells about it.
For more in-depth file format description you will need to look up
somewhere else: you will easily find loads of information on the Internet.
