The Poisson's Ratio of most naturally occurring materials are greater than
zero. There are some fabricated materials that have a negative Poisson's

Most biological soft tissues are considered nearly incompressible, i.e.
Poisson's Ratio of ~0.5. For finite element modeling, a value less that 0.5
should be chosen, e.g. 0.495, to avoid problems.
Young's modulus values for soft tissues are usually on the order of 10's of
kPa, but you will need to find an article where mechanical testing was done on
your tissue of interest.
