[CMake] text file modifications while Install

I create two versions, one for use in the build-tree and another for the
install-tree (e.g. ${CMAKE_BINARY_DIR}/InstallFiles/.../config.cfg) at
CMake-time.

Don't think there's a better (and safer) solution.
