[CMake] Configure Mac OS X for 32-bit

What's 'correctly'?

For example, on Mac OS X 10.6 on 64 bit capable hardware (that is, any
Mac you buy today), the OS can run both 32 and 64 bit applications. 
Which is "correct"?
