It would be nice to be able to avoid this
and leave the @IP address as "unknown".

Do you want to limit the display of IP addresses for a specific site or for the whole project?

I would say that both level would be useful.
The project level may set the default project behavior
and the site-level may be used to change the default.

We have added an option per project to disable the display of IP addresses. This option will appear when we upgrade CDash to 1.4 on the server.
