IMO, XP Embedded is essentially XP with a few extra
deployment tools.  The core is the same so I would be
skeptical that performance would be any different.  In
terms of lockdown, XPe does expose some config options
more readily but most exist in XP already. 
Additionally, if you have any device driver(graphics,
etc) you intended to use chances are you will have to
componentize them which can be non-trivial/unsupported.
