but I cannot reset a cache entry to NOTFOUND.

My only recourse is to edit the CMakeCache.txt file by hand and set the value back to NOTFOUND.
However,
I know that editting the cache by hand opens me up for the wrathe of Kitware.

Can a method be added to the GUI to allow you to reset a parameter to its default?
