If this message appears for more than one imported project, you have conflicting C++ compilers and will have to re-build one of those projects. Was set to /usr/bin/c++

The next time I try to configure the project, it resets the CXX_COMPILER to /usr/bin/c++, because it finds an older version of VTK. So there seems to be no way to configure my project while using VTK 5.6 but to delete all older versions of VTK?

This sounds like a pretty oldish version of CMake to me... What version are you using?
