Did you try cmake -U ?

From the help:
Options
  -C <initial-cache>          = Pre-load a script to populate the cache.
  -D <var>:<type>=<value>     = Create a cmake cache entry.
  -U <globbing_expr>          = Remove matching entries from CMake cache.
