Just put
#define SYSTEM_NAME "${CMAKE_SYSTEM_NAME}"
or
#define ${CMAKE_SYSTEM_NAME}

In your configurable file and, I think it will do the job.
But for the second case, you rely on case sensitivity of the content of
CMAKE_SYSTEM_NAME and whether it has invalid characters for C names
